‘CA’ stands for ‘controlled atmosphere’ and defines refrigerated storage where an artificial atmosphere is maintained. It is continuously monitored and kept at constant values (e.g. for oxygen and carbon dioxide) to slow the ripening process of the refrigerated product. Removing ethylene, the natural ripening gas, keeps the refrigerated product fresh.
A special refrigeration system for the refrigerated CA storage of fruit was realised for the farmer Urs Grunder, who produces under the seal of quality ‘The Best of the Region’.
